Fringe Festival 2026: Theatre and feasts! Together at Last!

If there's one festival that I look forward to the most every year in Edmonton, it's the Edmonton International Fringe Theatre Festival! I have been attending this festival for 21 years (!!?) and I look forward to those 11 days on the Fringe grounds and seeing shows all year long. I went from dipping a toe (walking around on the grounds, trying a green onion cake) to the total hardcore fringer that I am today (I spent every day on the grounds! I saw 25 shows!!). All of that fringing requires sustenance. And while the Fringe may not be known for its food - save for the iconic green onion cake - there is plenty of wonderful food to keep your energy levels up. Still the largest, longest running Fringe theatre festival in North America, you know that they've got food options to satisfy every taste! Here are the foods that I ate at the festival this year:

Green Onion Cake from YEG Green Onion Cakes ($9.00) One of the most iconic, quintessentially Edmonton foods, a green onion cake at the Fringe is like no other. It's a requirement. I ate six! This legend is served with spicy sambal and I recommend lots of it! (They had the good Huy Fong Foods brand back this year and you can taste the difference!) Up another dollar in price this year... Inflation, man. Nothing is safe.

Flipdope Tots from Flipside BBQ ($13.88) Tater tots topped with BBQ pulled pork, Flipside sauce, and mozzarella cheese. These were a HUGE hit at Taste of Edmonton this year (I ranked them in the number TWO spot!) so I was very excited to get to eat them again! Golden tots (who doesn't love a tot?!), caramelized pulled pork (those crispy bits!!), plus saucy cheesiness. A very crave-satisfying and portable snack!

Tigers Blood Freshly Squeezed Lemonade from Lemon Heaven ($6.50 for regular) Probably the most classic Fringe beverage, nothing tastes better on a hot summer's day. It's a must! I appreciate that their cups are compostable. Tigers Blood is a strawberry coconut flavour, which is the best one in my opinion. Last year the wasps commandeered the flavour syrups and it was a real problem! Thankfully they solved the wasp gauntlet this year by using a well-placed fan in front of the syrups - it worked!

Tomato Pasta from Spaghetti Cone Food Truck ($15.00) SPAGHETTI CONE! I get a spaghetti cone each year and I enjoy it very much! It's still got everything; portability, a large portion of spaghetti for all of your carb-loading needs, and a probable mess down the front of your shirt! Last year I said that I wanted to try the Coconut Curry one next time... However, this year that one did not exist. SAD!! I settled for a tried and true tomatoey one and was not mad at it. Next year I want to get the Mushroom Alfredo Sauce one! (Unless they bring back Coconut Curry!)

Kani Sushi Bake from Takopo ($18.00) This might have been the best kept Fringe food secret. I bet no one else knew to order this as it's practically hidden on the menu and super under-the-radar. I ranked this dish at number 24 at Taste of Edmonton and I already knew that it was good. Super filling, this sushi bake will give you life!! It's like eating sushi and lasagna!! So comforting and delicious and full of umami! It's served with a full packet of nori. This is a must-try!!

Biscoff Kunafa Salted Caramel Slush from Bestea Bubble Tea ($13.00) I get a bubble tea from these guys each year and they always come up with new and exciting and trendy flavours! Biscoff is a pretty big deal these days and Bestea capitalized! This bubble tea has a lot going on but I enjoyed it very much. It was kinda chocolatey and there was lots of chewing involved with the kunafa and tapioca. The salted caramel took the whole drink to another level!

Flipside Bao from Flipside BBQ ($16.88)
BBQ pork belly in an ube bao with pickled papaya, greens, and drizzled with Flipside sauce. Unfortunately the BBQ pork belly was short-lived and they switched this protein out for BBQ pulled pork. Which was fine. Served with crunchy shrimp chips, this bao is messy to eat but sooo good!!! The flavours were absolutely delicious and the pulled pork was so saucy and unctuous. I liked the pickled element that helped to cut through the heaviness. Plus the purple bao buns are a perfect match for the Fringe colour scheme! One of the best things to eat at the fest!

Halo Halo from GenTea ($14.00) Classic Filipino favourite! A refreshing blend of colours, textures, and tropical flavours! Halo halo translates to "mix-mix" and that's exactly what you'll need to do with this big combination of sweet components! There are jellies in there, beans (yes, beans!), ube ice cream, and plenty of other things! I was most impressed by the addition of custard-like leche flan - which you don't always see. This whole dessert is homemade by GenTea and they nailed it!!

Risol from Satay Madura ($6.00) Crispy Indonesian crepes filled with chicken, potatoes, and carrots. Served with sweet & spicy sauce. A really great and unique snack! Crispy on the outside and savoury on the inside! This reminded me a little bit of a Vietnamese bánh xèo - it's very interesting that so many different cultures have their own version of a crepe! I liked the warm filling and satisfying crunch of the outside.

Deluxe Munch from GenTea ($16.00) Garlic brioche bread, bacon, ham, lettuce, sliced cheese, folded egg, sweet sauce, sriracha. This style of egg sandwich is very popular right now and this version sure ate like a meal!! Crammed full with toppings, it's pretty messy to eat but comes served in a handy cardboard sleeve. It's saucy, meaty, and very eggy!! This sandwich will certainly power you though your long Fringe days!

Ube Mango Overload from Flipside BBQ ($10.88) Ube mango sticky roll with ube ice cream. Was there a lot of ube at the Fringe this year? Yes, there was! I ranked this dish at number 12 at Taste of Edmonton and looked forward to trying it again. The perfect combination of hot and cold, these are like spring rolls stuffed with warm mango. The menu said that these were served with ube ice cream but I got vanilla. A delicious and under-rated sweet treat!

Monster Cheesy Samyang Takoyaki from Takopo ($15.00)
Not your regular takoyaki! Spicy samyang noodles inside, cheese overload outside, plus that housemade chili garlic kick. A monster indeed!! This thing was probably the wildest food item available at this year's Fringe. Did you try it?! Imagine if a takoyaki had mac & cheese inside of it instead - because that's essentially what this was! You get the flavours of takoyaki with the bonito... But something completely different and new on the inside. It has a lot going on but it was worth a try!

Choco Banana Fritters from Satay Madura ($8.50) Crispy fried banana topped with chocolate or pistachio sauce & ice cream. I liked that I was given both the chocolate and pistachio sauces, not one or the other! I had this item at Taste of Edmonton and ranked it at number 11. It was SO GOOD and continued to be so at the Fringe! Warm fried banana with a crispy outside... Ice cream for that hot and cold indulgence... Plus a sauce combo that makes you think of Dubai chocolate. The best dessert at the Fringe!

Sago Mango Drink from Satay Madura ($8.50) Refreshing mango goodness with creamy coconut milk and chewy sago pearls.
This truck always has an interesting beverage on offer and this year's was no different! Very creamy and sweet, it was kind of like a bubble tea but with much smaller tapioca pearls. The mango flavour was front and center! Maybe not the most refreshing but very delicious!
I am so sad to see this year's Fringe go! What an incredible festival filled with shows, fun, and delicious eats! See you next year for even MORE green onion cakes!
