Gotta Try It!: Spruce Bud Ice Cream
Spruce buds. You've seen 'em. They're the fresh bright green buds that appear on spruce trees in the spring. Did you know that these can be harvested and eaten in various ways? It's all the rage! If you're looking for the ultimate seasonal treat for spring, make sure to visit one of Earnest Ice Cream's four locations in Vancouver. For a limited time they are serving up Spruce Bud ice cream! They describe it as a lovely fresh flavour that is made with foraged spruce buds. Young spruce tree buds are steeped in an ice cream base to make this delicious flavour. It’s bright without being woodsy and it’s a total west coast treat.
I tried it tonight! I expected it to be green! I agree that it was very fresh. This scoop boasted a mild flavour that hinted at the forest. (And of course featured Earnest's signature creaminess.) It's something special and different. Springtime on a cone! Only available for a very limited time in the spring. TRY IT!
